A MAGICAL NATIONAL PANCAKE DAY | Minnie Mouse Cinnamon Pancakes

Happy National Pancake Day! I love all these different days to celebrate food and basically anything else you can give it's own day. I knew when I saw this day on the calendar it was time to work on my pancake skills. We had tried our silicon Mickey shape mold, from Shop Disney, once before to try and make pancakes but failed, however this time I had determination on my side. I looked up a couple recipes on Pinterest and ended up combining the Bisquick pancake recipe with a recipe for cinnamon roll pancakes. I LOVE cinnamon rolls and I knew I just had to try this combo.

Bisquick Pancak Recipe

• 2 cups of Bisquick Mix

• 1 cup of milk (we used Lactose Free)

• 1 egg (we actually don't use eggs because we've found it makes the pancake fluffy and lighter)

Mix together ingredients in a bowl

Cinnamon Roll Filling (From Pinterest)

• 4 tbsp of melted butter

• 1/2 cup of brown sugar

• 2 tsp of cinnamon

Mix these ingredients together in a separate bowl

Instructions

1. With pancake mix and filing in separate bowls, spray your skillet before it heats up.

2. Once the skillet is hot place the mickey silicon mold on and SLOWLY pour the pancake batter into the mold. We found it worked well to fill it up a little over half way up.

3. Wait for little bubbles to appear, then using either a squeeze bottle, OR just a fork, swirl in the cinnamon filling on top.

4. Wait about 1 minute or until you are able to flip the pancake, allow the other side to finish up, and plate. BE CAREFUL when taking it out of the skillet because the bottom side with the cinnamon with be a little sticky

*next time we plan on pouring a little pancake batter, then the filling, then topping it with more batter.

DECORATE

You can leave it looking like Mickey OR create Minnie by slicing a strawberry in half for the bow and a spot of whip cream in the middle (or a sliced banana if you don't have whipped cream). Sprinkle with powdered sugar, turn on some Mickey cartoons and enjoy your magical breakfast (or lunch or dinner, no judgement here!).

It's fun when you can add a little magic to an ordinary day!
